Dinner/ Lunch

Crazy Monday

Mondays always seem to be the most hectic day of the week for me. Driving in from Tampa, going straight to work, then rushing home, making dinner and going to school all night. Not to mention breathing (and blogging!) in between! My lunch today was the highlight of everything just because my mom packed it for me (so cute) and I love my new lunchbox!!! She packed leftovers of the Easter feast for me: the other half of my spinach pie, then two little containers full of leftovers roasted veggies…along with a cute cloth napkin of course!! It was divine 🙂

A couple hours later I snacked on some trail mix I had brought with me from home and that got me through just fine til dinner.

Speaking of dinner–what fun! I tried one of Happy Herbivore’s recipes for Blue Corn Chickpea Tacos and they came out great!! I didn’t have any taco seasoning on hand so I just used a dash of cayenne and a tsp or two of chili powder along with lime juice and Shoyu soy sauce (out of tamari). I loaded my tacos up with some really quick homemade guacamole (1/4 of an avocado mixed with some lime juice and 2 tbsp salsa), spinach and salsa and had a fruit plate with strawberries and grapes on the side. I absolutely love Mexican food so this meal was so much fun for me! I made extra chickpeas to have with my lunch one day this week because these little things are seriously addicting!!

I really don’t know what is going on in school tonight…I never know on Mondays! I DO know that we have a short week this week and I am excited about that—no school on Friday! Yay!! I got Friday off from work too so that will be my day to rest and pack for my trip this weekend to my hometown (going to follow around a pastry chef at a private club there for the weekend) and my trip home to Tampa all next week. SO excited about having some much needed down time to rest and relax!

    Jenna– I am currently eating my first every Tofurkey sandwich: tofurkey, munster cheese, and spinach panini…. and i am OBSESSED!!!! This is the best thing EVER! I am never going back to turkey again. Thank you for inspiring me! You’re the best!!

    Attention brown baggers (or tupperware container takers)….

    So, I have literally eaten a turkey sandwich with cheese on whole wheat for lunch practically EVERY day for the past 3 years. I’m not kidding. I usually have that, some rice crisps, soy chips, or crackers and cheese. I’m not sick of this necessarily but I’m getting a little tired of having to assemble a sandwich EVERY night before work. I’m looking for some new ideas. I’m not a salad eater so that’s out. I love to stretch out my lunches and eat lots of things. What do you all take for lunch? Some things I was thinking were:

    -bag of grapes
    -sliced apple
    -crackers and laughing cow cheese
    -yogurt

    Would you say this is a good lunch to pack? Yes, I know I’m lacking the veggies but I don’t eat raw veggies. I like them cooked but not raw and I prefer not to microwave things at work because the microwave gives the the heebie geebies. You should see some of the things people put in there. YICK. Anywho, please share your favorite lunch combos! Thanks ladies (and gents)!

    Speaking of containers- (yours look cute and handy, by the way!) I remembered you mentioning in a recent post you bought yourself a new camera case. Coincidentally, mine just broke- so I was wondering what type you had gotten, or if there was a sturdy/cute kind you reccomend? I’m always lugging my camera around (food pics of course!) and it needs some protection!

    Aww, your mom packed your lunch– so sweet :o).

    My mom sometimes still packed my lunch during high school, and when she did, she’d put in a little note that said something like, “Have a great day” or “I love you”. Hehe

    Hey!
    I made stir fry tonight and added tofu for the first time. Hmmm…not sure I liked it very much. I know you have a recipe cooking it but what about freezing it and thawing it out? I froze mine a week or so ago and just put it in a ziploc baggie and put it in the freezer. It turned yellow in the freezer and when I took it out to thaw it lightened up a bit. Anyway…how do I freeze it and thaw it out? I’m not sure if mine got freezer burn or what but something tasted a little off. It also seemed a little water logged.

    help!

    i remember ages ago you bought a bunch of that yogurt that turned out not to be heathly and drove it all the way back to Orlando how long a drive is that because i want to get this ice-cream but they only sell it in the city and i was also wondering how you packed up the frozen yogurt ect because mine will melt quickly knowing my luck

    Its an hour drive….I packed it on ice though!!

    I got my camera case from Best Buy…it was just one of the ones on clearance . The brand is “Lowepro”

    I’ll have to talk to my mom later because I’m running late for work! I believe its called “DO your part” and it def. is from pottery barn. The store though, not the website. It might be an in store only thing!

    Hi Kelly!

    I try to bring my lunch to work every day, it’s sooo much cheaper (and usually better than the to-go options by my work.

    I usually bring a salad, but since that’s out for you, here are my other items I rotate:

    Motts sugar-free apple sauce
    Lemon larabar
    kashi pumpkin granola bar
    homemade strawberry/banana/yogurt/flax smoothie
    stoneyfield mini strawberry yogurt smoothie
    dried cherries
    apple and natural pb
    pacific brand single serving roasted red pepper soup.

    Hope any of that helps you – thinking of what to bring is harder than preparing lunch (for me!)
