Oh, So Messy! Oh, So Good!!

Only two more nights until the weekend…..tonight might be a long one though since we have to not only do basic production but also prep for tomorrow’s practical. Last Thursday we didn’t get out until 12:15 so I’m a little worried about tonight.

Since I had a lot of extra time today, I made a really good dinner! Well, I like to think I make really good dinners every night but I hate feeling rushed, so tonight was much better. Furthering my recipe tester obligations, I made chickpea tacos again! Boy, are these ever good. I want to make them for Ryan one night because I know he would love them too. I served them in blue corn taco shells with homemade guacamole (avocado + cayenne pepper + salsa + sea salt) and homemade queso sauce!! I printed this recipe for queso sauce out literally months ago and found it today while paging through some cookbooks and knew it would be perfect. It was so incredibly easy and better than any other queso sauce I’ve ever had (well, the only other queso sauce I’ve ever had was at Chili’s…….and this is much better). This dinner was SO messy but my mouth was in heaven. I could eat this everyday for the rest of my life and be totally at peace.

With my tacos I had some fresh cut honeydew melon. Honestly, its SO much cheaper to buy the whole dang melon than get the precut stuff in the produce section. A small container of honeydew at Whole Foods was about four bucks and I got the entire melon for only $3.99.

    Jenna that sauce looks GREAT!! Do you think I could leave out the nutr. yeast? Is it part of the structure or just for an extra boost?

    I think the nut. yeast is what gives it the cheesy flavor/texture, since it’s vegan.

    Those tacos look mmmm mmmm GOOD!

    Hey Jenna! That dinner looks soooooo good…I will definitely have to give those tacos a try.

    I just finished having my dinner–it was prepackaged, which I don’t usually do, but it was actually really good!! It was the Yves Meatless Lasagna…I got it from Whole Foods and I’ll definitely get it again. Just wanted to give a recommendation 🙂

    I too am keeping my fingers crossed that you get out well before 12:15! I never get to bed before then thanks to grad school, so I totally understand how rough chronic sleep deprivation can be.

    Glad you’re having so much fun being a recipe tester for Lindsay. I can’t wait for her book!

    And I am now craving honey dew melon after your post. I LOVE fruit so so much….nature’s “candy”!

    HELP!!!

    I’m running my first 5k race on Saturday in Indianapolis. The weather says its supposed to be 54 and raining! I’ve never ran in cold rain before. I’m super nervous! What do you think I should wear? Should I wear a hat? a coat? oh gosh I feel like a thrid grader asking such silly questions! lol

    It’s all about layers. I love under armour because it keeps you warm and cool at the same time and allows sweat to evaporate easily. (they also sell cheaper brands like McDavid at sporting good stores that are good quality) That a good first layer, then I like a long sleave t shirt over that and if you really think you are going to get cold, a windbreaker over that. Gloves help as well as a hat bc you lose a lot of heat through your hands, feet, and head, and a hat will also help keep rain out of your face. I would also double up on socks if I were you, I hate running with soggy feet!

    look in the bulk bins at earth fare if you have time. Its MUCH cheaper to buy in bulk!!! Thats what I do!
