Rollin’ Forward

Hi everyone—Happy Tuesday 🙂

I woke up super early this morning….like 15 minutes before my alarm went off. Don’t ya hate that?! It did give me time though to check my email/blog before work (usually I don’t get on my computer at all in the morning) and also make some oatmeal on the stovetop. Yay! I used 1/2 cup rolled oats, 1 cup silk light vanilla, a banana, some dried cherries, a TON of cinnamon and a spoonful of almond butter:

It definitely stuck to my ribs and kept me going strong all morning. Here’s my packed lunch today—a hummus and pepperjack cheese sammie on whole wheat with a yogurt and an apple.

I had the yogurt around 9:30 and it was really good! Sweet though…but a yummy treat. The ingredients include honey, lavender essence and plums—it “calmed” me during a busy morning! 🙂 I had the apple with my sandwich around noon. Sorry if I’m so boring with all my hummus and cheese sandwiches but honestly, the combo of Sabra’s Roasted Garlic hummus and spicy pepperjack cheese is too die for! I just can’t get enough.

I got off work around 3 and came home to relax and have a snack before my run.

And then I went for a 40 minute run. I’m using the Galloway Method to train once again and it has me doing two 40 minute runs on the weekdays and then a long run on the weekends (my long run day will be Sunday). For these 40 minute runs I’m not so much tracking my distance as I am just keeping tempo with a 4:1 run/walk ratio. I know this doesn’t work for some people but it really works well for me! During the first half of my run today I was hauling butt….going really fast…I passed my mid-point super early so I just kept going and turned around a little farther up. I ended up finishing the 40 minutes before making it back to my car (parked at my old middle school) so I got a nice 10 minute cool down walk in.  I just looked it up and my total mileage was 4.15 miles! Not bad for walk/run intervals! My shin was a little sore but I plan to really stretch it out at the gym tomorrow morning!

For dinner I had some baked tofu with a mini “grilled cheese” (slice of melty pepperjack on my olive focaccia), a salad and a glass of pinot noir. Perfecto. I used this baked tofu:

A rice pudding with two of my faaaavorite Almondina cookies. Love these!

As for work today—I was so out of it! I burned the rolls and almost burned the chocolate I was melting for brownies but Adam saved it in the nick of time. I don’t know what was wrong with me?! I just felt like my energy was zapped.

Anyways, when I got in I baked rolls, cranberry bread and olive focaccia! The focaccia turned out a-m-a-z-i-n-g!!!

And then more whoopie pies! These are a huge hit!

Today I used a cinnamon frosting and liked the results but I’m still going for more of a marshmallow like filling so I gotta keep workin’ on it!

I also baked peanut butter cookies:

And I made a huuuuuuge sheet tray full of brownies! These bad boys sure are rich with 3 1/2 lbs of butter and 2 1/2 lbs of chocolate in them! I still think my Vegan Brownies for your Heart are even better though!

They sure did smell heavenly though….I’m not gonna lie!

The last thing I did was put together a sacher torte. A Sacher Torte is a traditional chocolate cake with 2 layers and apricot preserves in between the layers. On top is a thin layer of chocolate buttercream icing and then it’s topped with a chocolate glaze. Honestly, I’m not a huge fan of this because I don’t really go for the fruity chocolate combo. It’s a pretty old school cake but we still have people asking for it!

Whew! Another busy one—-tomorrow is my day off though! 🙂 I’m off to make some raspberry herbal tea and get ready for the DEBATES!!!

    I know it is probably hard work and hours, but I think your job sounds fabulous! I just took a class for focaccia! My Italian roots are making me want to perfect it. Is this your recipe that you can share? What kind of olives?

    Good job on the running. I agree with your method. Do what works for you!

    Caroline,

    I’ll have to ask Adam if he consents to me sharing his focaccia recipe. It’s sort of “his” recipe so I’m not sure….we used a combo of kalamata and green olives and literally poached it in extra virgin olive oil. Marvelous!

    I saw that you are coming to Chicago to visit Quaker, lucky girl. I work for them (but not in the office) and I KNOW that you will have a great time. They definitely know how to take care of people! Plus they always have all you can eat oatmeal for free! Congrats!

    Hey Jenna, have you ever had a yo-yo cookie from Publix bakery? I think those may be my all time fave. I wish I had one tonight 🙁 I get one every Sunday though, for my “treat.” If you have never had one you must try:)

    I think I gain five pounds just looking at all the delicious treats you post every night.

    I do that every day with my alarm clock. I wake up 10 minutes before it is supposed to go off!

    I bought some Rachel’s yogurts on sale at Whole Foods today….I’ll be interested to try them!

    Can you remind me what type of place you’re doing your externship in? I assume it’s a country club (?) but I’m AMAZED at how much product you turn out each day! I just wonder where it all goes 🙂

    As always, everything looks fabulous. Especially that focaccia- heaven. I wonder, is that sea salt sprinkled on top of the peanut butter cookies? I love it when they have a little salt on top to really bring out the pb flavor.

    Your eats today look fantastic. I especially love dinner. I myself had a delicious piece of bread with some cheese and a salad for dinner and it was oh-so satisfying. Again, bread and cheese is something people tend to shy away from but there is nothing more comforting, nourishing, and delish than bread and cheese (and love that you enjoyed some wine as well)!

    Jenna, I know you have a very busy schedule but just wanted to let you know that I have just loved watching you adapt to your new schedule, enjoy your afternoons and evenings (for once!) and deal with eating healthy in a new situation.

    Keep up the good work- you are the best!

    That’s hale sugar on top of the cookies. It’s basically like 50000 tiny granules of sugar all clumped together. I love it—very crunchy!

    Cinnamon frosting on the whoopie pies sounds like a very good upgrade. You may have felt off, but your work looks on – agree with others about wanting to lick the screen!

    Great to know that you’re running again and the galloway method works. Hey, don’t fix it if it ain’t broken right?

    One of my goals in life is to travel to Vienna to try the original sachertorte. My friend thinks that the sachertorte doesn’t taste that great but I need to taste the original just to know.

    Hey Jenna! Yesterday I tried the Galloway Method for my run and I was surprised with the results! The other day I did the same run – which was 4 miles in 43 minutes. Yesterday when I did it with the Galloway method it took me 39 minutes! I cut my time by 4 minutes and was very pleased. I think I was running harder and faster during the runs and speed walking to “recharge” during the 30-50 second walks. I do like this method!
