Makes enough batter for about 2 big waffles…Basically to serve 1 person
3/4 cup whole wheat pastry flour
1/2 tsp baking powder
pinch of sea salt
about 4 ounces soy milk (or other nut milk)
1 tbsp canola oil or coconut oil
2 tsp maple syrup
2 tbsp chocolate chips
1. Preheat your waffle iron and spray with nonstick spray. In a medium bowl, mix everything together and whisk gently until incorporated.
2. Pour mixture into waffle iron and cook until golden.
3. Serve with hot maple syrup!
They were really really really good. Perfect for Saturday morning if you ask me. 🙂

May 16, 2008 at 6:04 pmwait – does the 2 tsp of maple syrup get mixed in to the batter, or is that for serving on the side?

May 23, 2008 at 2:49 pmI mixed it in and it was great. I did add a little more milk because my mix was really thick.

July 3, 2008 at 3:32 pmThis is now my favorite go-to waffle recipe. I use whole wheat flour and add a little bit more soy milk – works perfectly.
Thank you so much for the recipe!
