A Goode Day

Hi friends!

I’ve had quite the day. Actually, for the first time really since the death of my brother a few weeks ago I am able to say that I had a really, really GOOD day. First of all, I made my first batch of Veggie Girl blondies

Although I admit mine weren’t vegan; I used 5 oz of Fage 2% instead of soy yogurt in the recipe. I also added a handful of toasted sliced almonds and unsweetened dried coconut to the mix. Dynamite!

And then I got my hair cut—

I love it! Its a short, sleek bob and feels almost weightless. I have a thick mop on my head so hair cuts like these really suit me.

I came home and snacked on some delicious Holiday Chia Pudding

And then, the coolest thing happened; I got an email from Murphy-Goode asking to have a preliminary phone interview with me tomorrow afternoon!!!!! Ahhhhh!!!!

I admit, I had a total freak out moment right there in my house. I know its just a baby step, but the phone interview tomorrow decides if I make it into the next round of the top 50 candidates. If I make it to the top 50, I then write a 500 word essay and hold a glimmer of hope to be one of the 10 invited out to Sonoma for a final interview. So please, if you haven’t already, VOTE FOR ME!! :)

My mom and I celebrated my good news by doing nothing else but having a glass of Murphy-Goode wine!

We tried the Cab and both really liked it! It would have been better if we had it with food but there were definite strong notes of blackberry and black cherry throughout.

In all honestly, we each only had a very small glass while watching Oprah. No chugging!

I also had one of these delicious Adora disks. Love me some chocolate and wine!

I tried the dark chocolate and it rocked! Of course I’m partial to anything dark chocolate, but I loved knowing I was getting the added calcium benefit in with my daily indulgence. Woohoo!

I didn’t get home until around 7 from my parent’s house and dinner was simple & delish—

Gnocchi!

I cooked two servings of whole wheat gnocchi in boiling salted water and then mixed the hot little dumplings in a fresh sauce made from 2 diced plum tomatoes, garlic and mini buffalo mozzarella balls. I sauteed the tomatoes and the garlic in a little extra virgin olive oil and then tossed the pasta in and added the cheese and basil. I made two servings so I have some for tomorrow (Ryan has been eating his way through the Mexican Lasagna I made last Friday night).

I had a splash more wine with dinner because what’s better with Italian than a great red?!

Dessert was, obviously, a blondie—

They came out awesome and I froze half the batch because I like ‘em frozen even more than fresh! They take on this cold, chewy texture that is to die for. Thanks, Veggie Girl!!

I’m off to read. Hot yoga flow in the morning!

Those blondies look so good. I can’t believe I still haven’t tried VeggieGirl’s recipe yet. I think I need to do that ASAP.

I love gnocchi! I know it’s not baking, but still I’m surprised you can stand the storebought stuff. Have you ever made it on your own? It’s my very favorite thing to make, and I just wrote a post about it yesterday!
