Then when I moved in with my boyfriend, he absolutely loves them and always wanted to make them. So finally, I caved, and found a recipe online where they were not BOILED…and omg. Delicious!!I love them now, and I’d even go as far as saying that they are my favorite. Crazy huh?? 🙂

Brussel sprouts come in at a close 2nd , brocolli steamed or sauteed with onions and gralic and a bit of salt and pepper. Or even just fresh and uncooked to munch on in the form of crudite. April 22, 2009 at 7:43 amOk, brussels sprouts are a CLOSE second (I love them roasted too), but let me tell you what I made just last night (for about the millionth time, and I see it again in the very near future): roasted broccoli. To. Die. For. You roast broccoli spears that have been tossed with some olive oil, salt and pepper, and thinly sliced garlic cloves in a 425 oven for about 20-25 minutes. They get all caramelized and browned around the edges and are just beyond heavenly. When you take them out of the oven, take a lemon and zest some peel over them, then squeeze the fresh lemon juice over. Finally, grate or shave a little fresh parmesan and toss it all together. The flavors will knock you over. It’s that good.

Now I love it in basically anything, but especially a stir fry. When I get chinese take out I often go for the broccolli in garlic or brown sauce. It’s like crack!

I put spinach in my salads and sandwiches but the best thing yet is to throw it in the water right before you drain your pasta. Add a little Parmesan and you got a meal.

My favorite green veggie is a chinese vegetable called baby kai lan… (basically the baby version of kai lan! it’s much tastier and more tender than the fully grown version). The best way to eat it, in my opinion, is lightly stir fried in garlic with a dash of Chinese rice wine and oyster sauce. Amazing!

April 22, 2009 at 8:01 amI have several favorites…pretty good for a girl who didn’t used to eat any green veggies growing up. Lately my favorite is zucchini. Saute garlic and olive oil in a pan, add zucchini face down, sprinkle with salt and pepper, cook 5 minutes or so, flip over and add parmesan cheese, put in oven on broil until cheese is bubbly. I got this recipe from a Sprouts magazine and love it!

My favorite green veggie is without a doubt, broccoli. I like to steam it, drain it, and then add 1/2 tbsp of olive oil, three lovely cloves of garlic, 1/4 cup diced red onion, and a generous amount of pepper! SIMPLY DELISH!

That contains diced cabbage, oil and vinegar, salt, pepper, a dash of sugar, a handful of diced tomatoes, and lots of love that somehow makes the whole thing taste absolutely magical after marinating in the fridge overnight.

After a long run, I like to climb into the garden and eat the peas fresh out of the pod – so delicious. Now I always have a bag of frozen peas in the freezer. 2. Broccoflower! (Cauliflower and broccoli hybrid) It is amazingly nutty and you know what? I just cut it up and steam it or microwave it. It doesn’t need any kind of dressing- that’s how yummy it is. In addition, it’s yellow/green shade adds such awesome color to any plate.

I love it in smoothies- I blend up about 5 large kale leaves with a banana, frozen peaches or mango, and add a handful of chopped almonds. It is delicious! I also love my kale steamed with a little gomaiso on top… and it’s good raw, on its own!

April 22, 2009 at 10:53 amAs many others have said, I love almost all green veggies so it is hard to choose, but I really couldn’t live without spinach because of its versatility. You can eat it stir-fried with olive oil and garlic; creamed; blended for smoothies; mixed with eggs; in a wrap/sandwich; as the base for a wonderous salad, etc. (Tied for second place would be zucchini, brussels sprouts, asparagus, and kale, all of which I love roasted.)

My favorite green is kale! I love the texture and robust flavor. These days, my preferred preparation is to steam the kale with a clove a garlic, and once it comes out of the steamer, top it with a drizzle of olive oil and a good squeeze of lemon, and a sprinkle of kosher salt. Seriously, divine!

For example, steamed with a little salt, raw dipped in hummus or grilled together with other veggies in the summer on the grill! It’s also wonderful in soups and I always try to pick out extra many pieces of broccoli if I am served a veggie soup that contains broccoli. Yay, go mini-trees. 🙂

April 22, 2009 at 12:25 pmI’m gonna say, asparagus–I like it equally well steamed and then dipped in a vegan mayo with fresh herbs mixed in or roasted with garlic, olive oil, ground pepper and kosher salt. Both are delish and since I recently just planted 20 asparagus crowns of my own (and I now realize that each only makes 1 stalk!!!) I am super thankful for the pleasure and mystery this green veggie offers at the advent of Spring (also, Asparagus = Easter Dinner where I grew up in California; good memories…speaking of that, how funny is it that I remember the Asparagus more vividly than the chocolate bunnies?).

I’ll eat it raw, sauteed (my fav), fried (so amazing, but so bad), in bread or muffins, baked, or grilled. I really love it by itself though. The other day I couldn’t find my turkey pepperoni’s to make a pita pizza and was really bummed. I had a few zuchinni’s staring me down it the crisper and they made my day so better better.
