bacon and cheese muffins

These savory muffins are stuffed with sharp cheddar cheese and crispy bacon. They blow their blueberry cousins straight out of the oven and put bacon, egg and cheese sandwiches to shame.

Well that is, unless you decide to make a bacon, egg and cheese sandwich out of a split bacon and cheese muffin. Now that’s a little dirty.

And I like it.

Pretty much everything about these muffins make me want to do a happy dance. While they were baking, I was literally sitting cross-legged in front of the oven praying they would turn out as delicious as they smelled.

And they did! Oh, did they ever.

They’d be great for breakfasts on the run or for a fun addition to the Easter brunch table. I would even serve these instead of rolls at my dinner table!

Bacon really works anytime, anywhere. Would you judge me if I told you I ate one of these for a pre-yoga snack the other day? What kind of yogi does that make me?

Don’t answer that.

These are worth waking up early for.

Bacon and Cheese Muffins

makes 1 dozen muffins

Print this recipe!

Ingredients:

3 slices bacon

2 1/2 cups all purpose flour

2 tsp baking powder

1 tsp salt

2 eggs

1 cup milk

1 stick butter, melted

1 cup shredded sharp cheddar cheese

Directions:

Preheat oven to 350 degrees.

Fry bacon until crispy then chop into small pieces. Set aside.

Combine flour, baking powder and salt in a large bowl. In another bowl, whisk together eggs, milk and melted butter. Add bacon bits and cheese to milk mixture then add wet ingredients to dry.

Scoop batter into greased muffin tins and bake for 30 minutes, or until bottoms are golden.

Serve warm.

45 minutes

    I found a recipe the other day for Goat Cheese Muffins! So now they MUST be made – but bacon is a good addition 🙂

    And Yogi? Hah – when I did a training course (feels like a different life-time) – the hard-core serious yogis were not all your stereotypical “hippie” granola people – they drank ubiquitous amounts of coffee, ate Reese’s and baked chocolate cupcakes with butter.

    Oh myyyy…
    I think eating one of these bad boys before yoga makes you a smart yogi. Its best to fuel your body with what it responds best to and if cheese and bacon muffins make your body happy, then you should embrace – ahem, eat – them 🙂

    These look PERFECT. And yes, I do believe I would eat one (or 5) before yoga.

    Here in Saudi Arabia, pork products are illegal, but the next time I leave the country I’m going to have to find some bacon and a kitchen and get cooking, because there is no way I can skip this recipe.

    This might be the best thing I’ve seen all week…

    AHHHH! I have to make these ASAP! I made bacon cheddar biscuits for my sweetie last Saturday and he said they were (gasp) DRY! After shooting daggers at him with my eyes, I decided to forgive and just try again another time. These look like they might just be an improvement on my first attempt.       I was actually tolling the comments to see if any one had asked this because I made these last night with unsalted and they seemed to be lacking something. I’d definitely recommend salted butter and I absolutely plan on making these again.

    I have these in the oven now! My muffin tins must be a bit bigger because it only filled 6. I rarely bake so who knows if mine will turn out how yours look, haha. At least my house smells like yummy bacon now! 🙂

    I made these today while my husband was at work. He got out of the elevator on our floor and walked in our apartment to tell me the whole floor smelled like cheddar and bacon. He really liked them, but mine turned out much more buttery than yours (which was actually not what I wanted). I used a block of cheese shredded (rather than the shredded cheese from the bag) and I wonder if that might have been the culprit. I also think I might have over-greased the muffin tin. I can’t wait to try them again and I hope they’ll come out a little more dry.

    Hello! I made these today, but they were a wee bit dry and bland even though I reduced the baking time. So I topped them with more cheese before baking them and they were better! Pairing them with butter spread would be fabulous. I would perhaps add a little spice in them in the future. But thanks for the very easy recipe! 🙂 x

    I made these tonight for my son to have for breakfast or as a snack this week. I made a couple of tweaks, like replacing half the a/p flour with whole wheat, American cheese because that’s what my son likes and unsalted butter since the recipe called for salt and they turned out yummy! In fact, they are better than the bisquick recipe I was using which always came out dry and crumbly. Thanks so much for sharing, we are definitely going to be making these again!
