Good morning and happy Friday to you!
I can’t believe two weeks have passed since the accident. What a blur! Two weeks ago right now I was at work, not thinking ANYTHING like this could ever happen to my family. Crazy.
This morning I learned my lesson from yesterday and had a more digestible breakfast before my workout

Enter “chocolate chip” breakfast cookie! I used these raw cacao nibs as the “chips”—

And also used 1/2 cup oats, 1/2 banana, 1/2 scoop Sun Warrior protein powder, 1 tbsp raw almond butter and 2 tbsp vanilla coconut milk.
The chocolate chips made it though! I LOVE these nibs because it is like eating chocolate in its healthiest form. Each nib is packed with antioxidants, phytonutrients, vitamins, essential minerals and is sugar and dairy free. Finally, an excuse to eat your chocolate for real! Plus, they give you a nice little kick. I haven’t had coffee in weeks (instead I just drink a huge glass of water first thing) and these nibs give me just enough zing to get going!
A breakfast cookie made with a half cup oats instead of 3/4 cup oats is not going to keep me full for very long so it works perfect as a pre-high intensity exercise breakfast. I’m off to spin class this morning….a little nervous because it is the most intense spin class my gym offers! Eek!
See you in a bit!

Hey,
How do you make a breakfast cookie? I’ve been reading your blog for the past month and I keep seeing breakfast cookies, but I can’t figure out how you make them.
Thank you very much,
Aisha

That breakfast cookie look DE-LICI-IOUS! I need to try to make one again. My first one didn’t come out that well and I haven’t tried again.

Woa! I’m on my way to spin too!! I’m a little embarrassed to admit but…it’s been 2 months since i’ve gone! eeeeeek. I am so excited but I know it’ll be so difficult to get back into that groove! Happy Friday:)
Have a great spin class!
That breakfast looks great!
I’m impressed you can eat anything before working out in the morning! I can’t at all!! Have a wonderful spin class!!!
I’m going to try your combo when I next make a breakfast cookie. The first time I made it, it was totally soft and I had to put it in the microwave (which basically ended up being a bowl of oatmeal!). I like the cocoa addition
love the nibs addition!
Have fun at spin class
Love those nibs, I need to find them, they sound great!
i always need an excuse to eat more chocolate, i need to buy those!
Also went spinning this morning!!! I’d love it if they had intense spinning class in my gym…oh well
The Nibs look great, I think I’ll pick some up!
Can you share with me how you make your breakfast cookies? Do you mix the ingredients then put it in the refrigerator overnight?
Really curious!
Have a great day
Good to see more buzz about including chocolate with breakfast, even if it is just the tiniest bit. I’m all for it!
I like your idea of using the cacao nibs instead of traditional chips.
Good luck spinning and the chocolate in the breakfast looks good!
Your breakfast cookie looks delicious! I keep wanting to make one, but I always think I’ll change my mind in the morning and want something different. I would love to try those cocoa nibs – I wonder if my health food store would have them?
Enjoy spinning! I’ve grown to really love spinning and am going to look into signing up for more classes. Have fun cleaning the condo! And on your IKEA shopping trip.

I just made my first breakfast cookie this week! Your recipe looks delish. I’ll have to try it.
Good luck at spin class
And chocolate for breakfast is the best thing ever, especially when you can consider it healthy!
I love those nibs too! I’ve found that grinding them up in my spice grinder makes the best cocoa powder and is actually cheaper than buying the raw cacao powder.
Enjoy your spin class! I’m sure you’ll do great!
Hope your class went well! What a yummy breakfast.
i have yet to master the famed breakfast cookie, but i am jotting down combos i see out there so i can try them when i recover from my tonsillectomy. i LOVE this combo cause duh, it includes chocolate chips
thanks for the suggestion. where did you snag those nibs? also good work on no coffee for so long, that is impressive.
Jenna that looks SOOOOOO good.
Another good thing, I am sure you have tried it, Peanut Butter Co’s, Chocolate Dreams. OMGosh IT IS SOOO GOOD. I was eating it out of the container last night. Opps.
I hope you have a great day today.
I had cocoa nibs for the first time in my Pure bar this morning and they’re great! A nice crunch.
Ahhh that cookie looks so delicious!!!
Are you still having greens in the morning???
Mmm, I love the bitter, real chocolate-y flavor of cacao nibs! They’re especially good in/on vanilla/coconut ice cream.
Hope your day goes wonderfully, Jenna. <3
That cookie looks delicious! There’s nothing better than chocolate in the morning
This might sounds weird but I just love moving in somewhere cleaning it from top to bottom and reorganizing. I just about made my poor boyfriend crazy when I first moved in with him! lol have fun with your mom!
Hi Jenna, Glad you are feeling better this morning. I still don’t think you have taken a rest day!! Maybe that is why you were so tired last night? Please take care! You are definitely inspiring me to try my first tri this summer as well. Love to you and the fam!!
That cookie looks GREAT!! I’m going to be making that for my husband and me before our 5k in the morning!!
I’m on a breakfast cookie kick lately. Thanks for the coca nibs idea. This maybe a little late, but my thought are with you and your family.
Breakfast cookies, I Have TO TRY THAT!
