Big Paw

I think mine were a little too big???!!!

We were all laughing pretty hard because my bear claws were the size of a baseball mitt…..not a tiny bear cub claw, which is was supposed to be. I’m not sure what happened but when I realized just how enormous they were, it was too late to start over! Oh well, at least they were consistently large and not some big and some small. 🙂

And I’m done!!! I can’t believe Capstone is over. The anticipation we all felt for a year for it to come and now I’ve made it and it’s in the past. Way in the past actually, because I’VE GOT A LONG WEEKEND!!!!!!!!!!!! Yup 🙂 We all stayed late last night, cleaned, discussed pros and cons of the class and we don’t have to come back tonight. I haven’t had a Friday night off in, um, a year?! Can you tell I’m excited about it?!

Since I don’t have school tonight and because, well it’s Friday, I slept in until almost 8:00 this morning and am saving the gym for after work. This weekend is a little spur of the moment since I was initially going to go to Vero Beach and do paperwork for my new job, but Ryan’s grandma (the one we went to visit in North Carolina last month) is not doing well and has been in the hospital. So we are visiting her tomorrow and eating dinner with her as well. Ryan is working late at the office this afternoon so I am going to go to work, come home, go to the gym, eat dinner here and then drive home to Tampa afterwards for my “crazy Friday night” (aka sitting on the couch watching the Olympics).

For breakfast this morning I was craving waffles right when I got out of bed so I made two toasted kashi waffles with a whopping spoonful of almond butter, a smear of raspberry jam and half a banana. I had three leftover hard boiled egg whites on the side that I needed to eat up before they went bad.

And here’s the contents of the infamous lunch box today. For a morning snack I packed 1/2 cup cottage cheese with a pear:

And for lunch, a turkey whole wheat pita with dijon mustard, spinach and a yogurt and a peach on the side:

And lastly, for a midafternoon snack: half of an Ezekiel english muffin with a spoonful of almond butter and some banana slices. This will definitely fuel my cardio workout at the gym after work!

Edited to add: Hi guys! It’s 4:30 and I just off work and am getting into my running shorts to hit the gym for some cardio. Ryan surprised me this afternoon by asking if I wanted to go out for a late dinner with some friends tonight to celebrate Capstone being over and of course I said yes! 🙂 Just wanted yall to know—-I’ll post again later tonight!     I had bits and pieces of the filling, which was divine! the recipe made exactly 6 bear claws, which was what I had to present for a grade. No room for snacking or mess-ups!!! 🙂

    Have a great long weekend you deserve it! I just caught up on the past few days of posts.-there were so many comments What’s funny is I actually thought you were on a diet since the food you were eating was so low cal with so many egg whites, etc. Even a lunch of soup, and cheese,and fruit would leave me hungry. That was so sweet of your friend to help you out so you could figure out the best plan for you to gain weight.

    I was about to buy some fage but was wondering whether you can tell a difference b/w the fat free and 2%. You seem to mostly by the fat free.

    Just curious, if French yogurt typically thick like greek yogurt is?

    I don’t think I’ve ever commented on your blog before, but I read it often and absolutely love it. You and Kath are awesome – living proof that you can eat and still look great and be healthy!

    I’ve been especially interested in these past couple of days since your trainer friend gave you some good advice. My question is, what if you are trying to LOSE weight as opposed to gain muscle? I am not huge, but I wouldn’t mind dropping some pounds. I am currently quite active, but I’m always so confused about whether or not I should be taking in much fat. I was eating peanut butter for a while, but nothing seemed to be happening so I’ve pretty much cut out all fat, give or take a few grams here and there. I’m so curious to know what your trainer friend might say, but I understand if she is busy. I noticed Mandy posted her email address and so I thought I’d do the same just in case.     Oh, you girls! I have to laugh when I read the comments of those who think you’re not eating enough. You are active and YOUNG so of course you need enough nutritious stuff along with treats, but let me tell you: when you get older it’s a different story! I used to be able to eat tons; I’m twice your age now and I eat about like you do (every three hours, roughly 1,300-1,800 calories/day) and I cannot lose anything! AND I exercise about 5 hours/week. I’m normal size…well, perhaps a bit smaller than America’s current “normal”… but I’d like to lose about 15 pounds to feel that “in-shape,” “tight” feeling you mentioned.

    I think all these so-called “informative” articles in the media (mostly magazines) have us thinking 2,000 calories is de rigeur for women; but I think that’s too much for a woman over 40-ish who wants to keep trim. (Any older women readers out there? I’d love some feedback on this.) I think your intake of everything fits “Jenna;” it’s your unique body. You don’t seem “hung up” on any of it. Trust me, you’ll be thankful you’ve trained yourself into these wonderful habits in about 20 years. I’m just curious all the sudden: What is your mom like eating-wise? Are her habits as good as yours? My guess is they are because you’ve said she raised you to be a healthy eater. Thanks for the great effort on the blog.

    P.S. Do you still have “dessert” every night? I loved the two-bites with tea photos.

    Help… Any suggestions for a substitute for egg whites? I know they are a great source of protein, but I just can’t get past the texture.
