Yum! The oatmeal recipes sound really good. I usually am a cereal girl but in the winter it’s time to mix it up! And the prepackaged oatmeal is also too small and leave me hungry again in 5 minutes. So your recipe sounds good! Do you have an oatmeal recipe that can be done all in the morning instead of overnight?

Yes, the oatmeal can easily be done in the morning. It actually would even be better if you made it in the morning! It will take about 5-10 minutes though because you really need to cook the oats on the stove.
Boil together 1/2 cup water, 1/2 cup milk and 1/2 cup thick rolled oats (old fashioned or scottish)
stir in some salt, cinnamon and vanilla and stir. Simmer until thick (about 5 minutes or so)
you’re done! Top with maple syrup, peanut butter, banana or brown sugar!

Thanks for doing this site. Today I ate my first banana. No joke. I am 31, have never liked fruit, because of the texture. But I am really working to try new things. Your peanut butter oatmeal looked so good that I made it. YUM! And I am stuffed from eating it. Kudos and thanks again.
Question about the half wheat rolls (which sound delicious)—do you recommend rapid-rise yeast, or regular? I know they aren’t always interchangeable..

Hey I love macaroni and cheese so of course I love your recipe here for the healthier version. Could you use frozen squash to make it even quicker?

You could def. use frozen squash!
Would you just defrost it or put it in with the cheese packet? or some other way?
I would defrost it first then add it to the broccoli before adding the cheese/pasta mixture. Maybe I’ll try that next time!

I saw you had a really yummy looking quinoa dish the other night that you posted here (thanks!) and I just wanted to share another one that works as a great side dish when you want something like mashed potatoes… but better! I used quinoa and frozen cauliflower, and actually quartered the recipe (because I don’t have 8 to feed!) and it turned out great.
Mashed Grains & Cauliflower
- 1c minced onion
- 1tsp EVOO
- 2c millet, quinoa, couscous, or other grain of your choice
- water for cooking 2c of selected grain according to package directions
- 4c cauliflower (cut into medium-sized pieces
- 1/2tsp sea salt
Brush pot with oil and then add onion. Saute for 3 minutes, then add grain until toasted. Add cauliflower, salt, and water; cover pot and cook until grain has absorbed all the water. When the grains are done, mash the mixture together with a potato masher. Add a little water if necessary in order to get a smooth consistency. (serves

I had a suggestion for this page (I don’t know if this would be hard or time consuming to do, so feel free to decline!). Is there any way you could have a table of contents at the top with just the names of the dishes with the names being hyperlinks to the recipes below? It’s kind of hard to sort through and you have so many good ones it’d be great to just be able to see a list at the top of all the options and be able to click on the one we want.

I’m not Jenna, but just wanted to comment about the lemon question. Fresh lemon juice, or any fruit juice for that matter really does add an amazing amount of flavor. It is definitely worth it to buy that whole lemon!

The olive oil cake recipe is from the Vegetarian Times Cooks Mediterranean, which is available for purchase in my store. I HIGHLY recommend buying this cookbook. I’ve made a bunch of things out of it and all have turned out amazing.

Hello-I have been LOVING your blog and have tried and fallen in love with so many of the foods you eat. I get most of my goodies at Trader Joe’s because there isn’t a Whole Foods very close to me. I was wondering how you bake your Tofu? I really like tofu (the best carrot cake I ever had was made with silky tofu!) but I am a unsure how to go about it or which kind to get. Any suggestions?? Jenna, Tried your enchiladas tonight! Awesome! And I used Chobani plain yogurt instead of sour cream! And doubled the recipe to use a 13 X 9 pan! I fit 6 in the pan, mixed the leftover ingredients together and my husband will make a burrito in a day or two! He said after that meal, he could make me an honorary Mexican!
After not cooking due to cancer for the past 5 years, I am slowly trying to get back into it to give my husband a break! You have been making it a little easier with your reipes!
