Hi friends!
First of all, thank you guys SO much for all your encouragement and support all the time! I seriously don’t know what I would do with you. Yall mean the world to me! =)
Today I started my 5K “training”. I’m not going to have some sort of crazy formal training plan for the next couple weeks but I’m going to try to run maybe twice a week and slowly work up to the three miles. Lots of yoga as well! Today I went outside and ran for 10 minutes, walked for 30 minutes, and did 3 sets of lunges down the street (haha). I could have ran more than 10 minutes but I really want to go slow and not hurt my fragile shins again. I didn’t officially mark the distance as a mile, but I’m just figuring I went about that distance…probably a little more because I’ve always been a fast (er) runner. Actually, I think that is my problem! I run way too fast, burn myself out and hurt myself! Not good. If I’m really working and timing myself, I usually clock in at about an 8 1/2 minute mile. Today I had a ton on my mind and actually was quite upset about something on the homefront, so I probably did run a little fast.
When I got home I felt a lot better, showered and plunged into my Esther bible study, which, by the way, I am enjoying SO very much. I had never really read the book of Esther before but to really study it line by line is fascinating! It is such an epic drama and reads like a story. And, of course, Beth is a fantastic guide. Obviously. I sipped on some water + splash of POM juice in a wine glass while I read:
Then it was time for dinner! On the menu tonight: Blue Cheese Bison Burgers! Mmmm and they were soooooooo good…….especially when paired with my favorite sweet potato fries:
Blue Cheese Bison Burgers
Serves 4
1 lb ground bison (buffalo)
1/4 onion, chopped fine
1/4 cup crumbled blue cheese
pinch of sea salt and pepper
1 tsp butter
1. Combine all ingredients except for butter and form into four small patties. Melt the butter in a cast iron or regular skillet and cook the burgers for about 4 minutes on each side, depending on how you well you like it cooked.
I enjoyed my bison burger tonight with half a slice of sharp cheddar and on a toasted Arnold’s Sandwich Thin. Divine! =)
I had a glass of red wine with dinner and, for dessert, some organic dark chocolate:
In other news, my bread was won by Chrissy tonight via Meghann’s Blog Bake Sale!!!!!!! Yay Chrissy!!!!!! Actually, it is quite funny because Chrissy is one of my very close friends in “real life”! We met back in high school through FOCUS (fellowship of Christians in Universities and Schools) and volunteered as camp counselors together up on Martha’s Vineyard a couple summers in a row. She is the BEST and I just find it so funny that she won the bread! Hahahaha 🙂
Bath and bed time! Tomorrow is HUMPDAY and you better believe I’m excited. I can’t wait for Saturday with the boy!

I think the book of Esther is really interesting, I did a huge analysis on it for school and really enjoyed it!
