Cookies & Milk + Kombucha = Friday

Hi friends—Happy Friday!!!


I hope everyone is doing well today. I started my 3 AM wake-up call this morning (I know, I know its only 10 minutes earlier than usual but still…..) and read Psalms 1-4 because they were rather short. A reader asked me if I am going by a set plan for reading them or just whatever I feel like, and to be honest, its more along the lines of whatever I feel like. I’ll probably read a couple every morning (or just one if it is super long). The Psalms is one of my favorite books in the bible (along with Hebrews and Romans) because I just find them so incredibly comforting. David was going through HELL and the pain and suffering he felt is so vivid and real on the page. I don’t know about yall, but for me at least, it helps to know someone else went through hard times like that. So often, I feel like we think we are the “only ones EVER to go through that”. Nope! I’m also going to be reading the book of Matthew with a couple bloggers during the month of March so if anyone wants to join us, feel free!

And then for a early morning snack I had cookies ‘n’ milk!! =)

Well, sort of. 😉 I mentioned the other day that I am trying to eat snacks with more protein in them in the morning because my early snack has to get me through the first 4 hours of work! Through trial and error, I have discovered the best combo for me at that time is something around 200 calories that gives me a strong ratio of protein/carbs/healthy fat. That’s why a larabar didn’t really cut it. I LOVE larabars but when I need 4 hour fuel, I have to have more protein (or else I eat all the candied pecans that fall off the sticky buns). Today’s snack was 1/2 scoop vanilla designer whey with 3 oz skim milk and a super charge me cookie (it was a little broken because I’m almost out!). It was perfect and I felt strong all morning until I broke for breakfast at 7:50.

Which was yummy blueberry almond oats!

YUM. The divine and FILLING combo of 3/4 cup oats, 1 cup skim, HUGE handful blueberries and HUGE scoop almond butter. I like my oatmeal on the drier side so that’s why I use only one cup of liquid per 3/4 cup oats. If you like creamier oatmeal, you should instead opt for 3/4 cup oats made with 1.5 cups liquid.

I also got this lovely for no other reason other than it is FRIDAY

My mom and brother met me for lunch after work today. For once I decided to branch out from the delicious Greenwise salad bar and get some sushi instead! My store has a fantastic sushi station. They do all sorts of crazy stuff and do it all with either brown rice or white rice so you have some options. I got my favorite—a summer roll!

This has crab and shrimp in it but usually I just get the plain avocado roll. I like it better than crab but this was fine. It is absolutely stuffed with carrots, lettuce, avocado and fresh crab meat (not the “mock crab meat” you sometimes see in sushi rolls–I read the ingredients carefully!). Still, I was a little disappointed because I could faintly taste mayonnaise and if you know me at all, you know that I HATE MAYO!!!!!!!!!! For some reason I like miracle whip but cannot even fathom mayo. And I only like miracle whip in either tuna or salmon salad. Not on sandwiches. If I can see white, I get so grossed out and can’t eat it. I guess the crab meat was mixed with a little of it….I still ate everything but in the future I will stick to the all veggie summer roll to play it safe.

Now THIS was delicious!

Today I am going to totally rest from exercise because, when I think back, I have exercised every day over the past week and need a breakie. Instead, I’m going grocery shopping (I know I work at a grocery store for 9 hours a day then go BACK to a grocery store to shop…I have issues….) and then attempting to take a nap. My dinner plans are up in the air right now because I think Ryan has to work late….I might make something for dinner at his apartment so then I can eat early and he can eat late when he comes home.

I have a SURPRISE that I am going to unveil on Sunday and I can’t wait!!!!!! Its going to be so much fun!!!!!!!!!

    I recently discovered Kombucha and I LOVE it! LOVE LOVE LOVE!!! I’m addicted now. I may have to get a second job to afford it, though. 😉 The Guava and Grape are my 2 fave flavors.

    My boyfriend is the same way with mayo but I kinda think it’s mental. He swears he can tell if 1/2 cup of mayo is used in a giant batch of artichoke dip. I don’t like mayo and never put it on my sandwiches or anything, but if it’s a flavored mayo or just used in small amounts in recipes, I’m fine with it.

    I’ve been noticing that I don’t stay that satisfied with Lara’s either. Not enough protein! I like purebars better, I think they add in protein powder.

    Okay, Hebrews is my favorite book in the Bible. It’s just so awesome to me to see the provisions God made for us to complete redemption so that no more go betweens or sacrifices are needed past Jesus!

    AND I love summer rolls…the only ones I can find have avacado in them, and I’m not a fan…maybe I should just try to make some on my own! 🙂 Hope your weekend is wonderful and restful.

    A way I have found to make Larabars more filling is to cut them in half lengthwise and spread a tablespoon of Almond or peanut butter in the middle for a Larabar Sandwich. It tastes really good especially with the apple pie or cinnamon roll flavors. I agree with you on not liking mayo. I try to avoid it and substitute a combo of olive oil and vinegar or lemon juice in it’s place. That works well in most recipes. I think that the chickpea salad looks great. Sometimes with pre-made foods like that at the salad bar, that have the ingredients listed on the price ticket, even though I don’t know the exact measurements, I will try to duplicate the recipe at home on my own. I bet the chickpea salad would be a pretty easy one to do! Hope you have a wonderful weekend with lots of rest! Also, I appreciate your positive bible tidbits, they add an extra positive touch to your posts!

    I hate mayo as well. It is so exciting to hear that someone else can’t stand it. I actually makes me angry which is funny, but it’s from a terrible experience with it growing up. Sounds like you had a good one, hope that your run goes well tomorrow.
