Feta Makes It Betta

I don’t know what y’all did, but thank you for sending good thoughts my way! My migraine is FINALLY gone!!!!!

And, I took a shower and washed my hair!

Can you even believe it? I’m actually managing to have a productive day and have been busy working on some projects and phone calls this morning. I got in a two mile run before it started to pour and then ate some reheated soup for lunch.

This worked very nicely with my “eat the entire fridge and freezer” campaign as well as “feta makes it betta”. I made this coconut lentil soup last month and it was just as good, if not better, second time around.

Pretty much, I’m just putting feta cheese on everything. I don’t really have a reason. It’s just good.

    i LOVE feta cheese. I had a kale salad with some plus tofu and roasted red peppers yesterday and it was delicious. I love that a little bit of it goes a loooong way.

    And I know that you already got a MASSIVE load of book requests, but if you’re looking for an UHHHHHmazing book of poetry, have you read The Last Time I Saw Amelia Earhart, by Gabrielle Calvocoressi? It is seriously awesome. I read it for the first time a few years ago, but I go back to it and re-read it every once in a while! It reads almost like prose, but the imagery is amazing.

    Okay, last book rec, I promise! 🙂

    yummm feta is my favvvvvorite. i made poached eggs for lunch today (im sick) and my dad came home from work just in time. they turned out perfectly!! 3 minutes was exactly the perfect time. i put sriracha on top and all was well!

    I’m glad your migraine is finally gone! I don’t get them often, but they’re quite debilitating when they do come around.

    Your soup looks delicious… and I agree that feta can only make it better! I think I like Greek salads so much for that reason!

    Glad you are feeling better. I’ve never thought about putting feta in soup! What a cool idea! I like putting feta in my scrambled eggs with some spinach. Best breakfast!

    At the risk of being a big ‘ol party pooper, might feta be triggering some of your migraines? :/ Cheese often gave me a headache (pain/fullness in the sinuses/behind the eyes, but not exactly a migraine) and I have read about some varieties being migraine culprits, which is why I mention it.

    Feta is sooooo good, do you ever need a reason to use it? I love it in couscous, on salad, on toast with jam as a dessert, I could go on and on 😉 Perfect accompaniment to clearing the fridge dishes.

    I only eat goat’s feta – can you guys not get that in the US? and it’s sooooooooooo good! It’s the one reason I can’t seem to go vegan. I’ve given up all things cow, plus eggs and everything, but goat’s cheese is just GAHHHHHHHHHHHHHHH………

    Especially grilled goat cheese on a warm asparagus salad. Is there anything better? Truly.

    I like the tip of eating spicy with a mild wine–so true!

    Glad your migraine went away – those are the worst!
    I love feta too, but don’t buy it often enough. I’ve been on a new cheese kick, trying some cheeses that I’ve never had before. Yum yum!

    Feta certainly makes it betta….the other day I had the most delicious breakfast sandwich from a nearby deli-an english muffin with egg, spinach, tomato and feta-warmed and toasted in a paninni press! melted feta mmmm…..

    hahahhahahha I showered for the first time in 3 days today…gross but whatever. I almost DIED when I saw that cow picture! You are hilarious! And of course Feta is the best…have you ever had Mt. Vikos Barrel Feta? I worked in the cheese shop for a while at my grocery store (worked in the bakery so it was a natural progression) and tried this …thought I died and went to heaven. Barrel aged feta is like NO OTHER!

    I have a tub of feta in the fridge and am putting it on just about everything! My favorite simple combo is cucumbers, tomatoes, balsamic vinaigrette, and then feta!
