Raw Tacos For St.Patty

Hi everyone!

Happy St. Patty’s Day!!

I’m honestly not a huge St.Patty’s Day person just because I’ve never been a big partier. Like I said last night, the only time I went out on this holiday was when I was 18 and a freshman in college (obviously)! However, I did wear a green shirt today under my uniform and sported green mardi gras beads at work for a little festivity 🙂

This morning I started off with a Pure bar and 1/3 cup egg white fluffies

Man, do I EVER love these Pure bars. This chocolate chip one has little raw cacao nibs in it and they lend such a delicious crunch! I highly recommend buying some of these if you can find them…they seem to be a diamond in the rough! I need to somehow find the other flavors to test out!

Breakfast was overnight muesli (1/2 cup muesli with 8 oz Voskos yogurt) with a big scoop of almond butter and raspberry preserves

Such a yummy breakfast that is pretty to boot! It did a great job keeping me full, too, because I ended up working late and not getting home to eat lunch until about 1:15. For lunch I had another wrap….this time I made sure to keep it all to myself! 😉

This is just 3 slices tempeh fakin’ bacon with 1/4th of a HUGE avocado on a Rudi’s wrap with a drizzle of bbq sauce. Simple and sooo delish. I also had KALE CHIPS (my mommy made them!) and a big fuji apple.

YOGA was the plan today and it felt wonderful!

I did a 60 minute advanced power flow and it felt delicious to stretch those hamstrings and calves. I swear, my legs have gotten a lot stronger since I have been running and biking so much lately. I’ve always sort of had “bird legs” (haha) and its sort of cool to feel myself getting stronger. Its so funny, in high school I wanted SO BADLY to have visible calf muscles! How random is that?! All the other girls on the dance team had these gorgeous calves and mine were non-existent no matter how many calve raises I did at the gym. However, I can totally feel my quads and calves really strengthening these days. I love it!

After yoga I started dinner…….and what a dinner it was!!!!

I used the recipe for “Raw Taco Nut Meat” in Ani’s Raw Food Kitchen to replicate the aaaamazing raw burrito I had last week at Grassroots with Courtney. Yep, that’s right, tonight I made my first ever totally RAW meal! And it completely 100% blew away my expectations. It rocked!!!!

So, last night, I soaked some almonds and walnuts in cold water. This morning before work (I know, I’m a maniac), I drained them and set them to dehydrate in my oven that I set at 350 then shut off to stay warm. When I got home from work, I pulsed them in the Vita Mix and mixed them with cumin, coriander, sea salt and olive oil. Voila! Even my mom really liked it…I think we were both totally shocked that it actually worked and tasted really good! I molded the little taco nut meat mixture into a log and set it in the fridge to have tonight. Meanwhile, I made some raw jicama and tomato salsa to go with my tacos—

(you peel this bad boy just like a potato. AMAZINGLY fresh and crisp…in my top 5 for fave veggies ever!)

This was my own little creation but it worked very nicely! To serve one: dice half a tomato, a half cup of jicama and 1/4th of a seeded jalapeno.

Squeeze half a lemon over and add a little bit of chili powder, cumin and sea salt. Mix to combine.

Optionally, you could also add 1/4-1/2 of a diced avocado. Mix and let sit in the fridge for one hour to let the flavors mingle. Yummy!

When I was ready for dinner tonight, I loaded two organic romaine leaves with some taco nut mixture, raw salsa and orange bell pepper. It ended up being a little more messy than anticipated!

Upon biting into this creation, my first thought was “wow, this is SO flavorful!!!” And flavorful it was. I especially loved the nut mixture and am glad I have three more servings left over in the fridge for the next few days! I was also surprised that this raw meal filled me up just right….I didn’t feel incredibly full, yet still felt satisfied. I actually felt so good I decided to pour myself a glass of organic red wine—

Nothing a little red wine and dark chocolate can’t fix, right kiddies? And tomorrow is HUMPDAY so there’s another reason to smile. THE WEEK IS ALMOST OVER. FRIDAY IS ALMOST HERE. Well sort of. Things I’m looking forward to are: bible study with Sarah on Thursday, lunch at Grassroots (again!) with Courtney on Friday, creating my mushroom masterpiece on Friday night and then racing on Saturday morning and hanging out with the boy!

    I’m not a huge partier either… no green beer for me!

    I wish I liked jicama…I think it’s the sweet taste and crunchiness that I actually don’t like. Love the wine and chocolate, though!

    All of a sudden I live in a town where the selection of bars is dismal to say the least. I’m gonna make a better effort to find these Pure bars so I can give them a review. Love the lettuce wraps – my latest addiction too (though I add tuna).

    That is so amazing that you can make taco “meat” out of nuts. I think I might have to try it sometime. I love that your mom is so adventurous with her eating and racing! You two must have so much fun together…she is so YOUNG at heart. I hope that I am like that someday too!

    I hear you on the calf muscles! I always wanted that line on the side of the thigh from the quad muscle when I was in high school. Random! You are inspiring me with your yoga talk to start stretching more…I really need to get into a better stretching habit after my runs. It’s my least favorite thing to do!

    YAY Raw food! Ani’s book is AWESOME! Try the raw miso shiitake soup, p. 118 — you will not be disappointed! also, try her apple pie (p.211) — you’ll never want a baked one again (at least while you’re in a warm climate like FL) 😉 i’m not totally raw by any stretch, but I have been having a BLAST lately playing with her recipies. . . please keep sharing — at least I don’t feel alone! 🙂 thanks!! 🙂

    Hey, I’ve been an avid reader/lurker for a while and always find everything you post so inspiring!! I’ve gotten MANY meal ideas from you 🙂 one thing I tried was making egg white fluffies like you do in the microwave, which I LOVED-only problem is… they make my apartment REEK!!! Does that happen with you too? Or am I doing something wrong… ?

    Jenna! I just wanted to thank you for the great idea about microwaving your egg whites! I tried it this morning and they turned out amazing…what a quick and easy way to add protein to breakfast. I gave you props on my blog today for the great idea!!

    Love this meal i’ts definitely creative.
    I’ve always had big calf muscles and in high school I was kind of ashamed of them because I thought they looked manly, now I love them and can’t believe I ever hid them.

    You are more brave than I, experimenting with raw foods! That does look pretty interesting though. Does it taste good enough to fool a very-skeptical-on-anything-healthy-and-vegetarian boyfriend though?!

    That would be the real test in our household!

    Hi Jenna! I’ve been participating in Meat-Free March and I’m really surprised at how easy it’s been (probably because I’ve never been much or a meat eater to begin with…). I haven’t really branched out from eggs, beans, and nut butters much so I was wondering if anyone could suggest a great veggie burger to try. (I know, shocking…I’ve never tried one! But what better time than now, right?!)

    Anyway, for those of you that aren’t participating I’d suggest taking part in the 25th annual observance of Meatout! this Friday. I just learned about this from one of the “green” blogs I have on my RSS reader and thought I’d share. I signed up for the weekly newsletter to get some recipes for Meatout Mondays…I think I’ll carry this beyond March — maybe even go Veg, who knows! Enjoy!

    Candi,
    Morningstar Farms black bean burger is my favorite veggie burger. I also like the Boca burgers for a less strong taste–it’s more of a plain patty to put lots of ketchup/mustard/relish on (the best part of a burger, IMHO!) They have a couple different kinds, but I like the vegan one the best. My mom likes the “Flamegrilled” one. These patties are enhanced with soy protein.

    Gardenburger makes a good tasting patty, but they don’t have very much protein (usually 4-5 g.) I would recommend their Portabella Mushroom-flavored or Sundried Tomato-flavored burgers though if protein consumption isn’t a problem for you.
