ultimate spinach salad

So, I kinda want a one piece bathing suit.

There’s just something so Jackie-O about them. I have this vision of wearing a strapless navy blue and white striped one piece with oversized black sunglasses while reading my kindle and eating a cupcake at the beach.

I haven’t found said one piece yet, in case you were wondering, but I will say that I’m actively looking.

And this is the salad I would so carefully pack for my Jackie-O beach day. It’s got the perfect combo of fruit, cheese and nuts and looks super classy when eaten in public places. Especially while wearing a striped one piece bathing suit. And especially while wearing oversized sunglasses.

I made this yesterday because, as much as I wish it weren’t true, a girl can’t survive off cupcakes alone. There’s gotta be some sort of balance there, you know? Like, for every shot of frosting you take you have to counteract it with a bite of spinach or something.

Or at least that’s what I keep telling myself.

Ultimate Spinach Salad for One

Print this recipe!

Ingredients:

2-3 cups baby spinach leaves

4 large strawberries, quartered

1 T sliced almonds

2 T goat cheese crumbles

for dressing:

1 T extra virgin olive oil

2 tsp balsamic vinegar

tiny pinch of sea salt

Directions:

Toss together all salad ingredients. Mix together dressing ingredients then drizzle over salad. Eat in the sunshine while wearing large sunglasses.

Time:

5 minutes

    Strawberries and goat cheese are meant to be together. I eat a variation of this salad all the time in the summer. Add some grilled chicken, and I am in heaven!

    1. Love the salad. Spinach and strawberries are one of my favorite combinations, especially with some thinly sliced red onion and a drizzle of balsamic. Yum!

    2. I LOVE one-pieces! I bought this awesome retro one from Macy’s two summers ago that I absolutely love. It fits me perfect, and I always feel awesome in it. It’s black and white and super flattering with the retro cut. Mine has straps, but they’re removable, too.

    Mmmm! I made this all the time, except I usually omit the cheese (not a fan of it on salads) and add in some toasted pecans, chopped dried apricots, sliced red onion, and/or craisins! Definitely a summer fave.

    i make this salad all of the time!!! I mix up the types of cheese, fruits, and nuts to keep things interesting. I love to candy the nuts too. In regards to your one-piece bathing suit, I LOVE IT. I think one-pieces are adorable and I secretly can’t wait to wear one!

    Looove classy one pieces. I got a vintage looking black with white polka dot one from Urban Outfitters last year and I adore it. Anthropologie has some super cute one pieces if you’re willing to spend a ton of money hah.

    This is my favorite kind of salad. Although I never make it myself… I just wait around for other people to serve it or order it at a restaurant. Looks simple enough though!

    I love one pieces. My thought is, you should put blogging on hold and throw yourself full-force into bathing suit shopping. After all, summer is just round the bend!

    I actually have TWO one-piece swimsuits that I love! My friends thought I was crazy for buying them since they assume one-pieces are not for twentysomethings, but once they saw my retro suits they went and bought them too! I even used them for a retro pinup photo shoot.

    My roommates and I make this salad all the time! It’s truly one of those simple, delicious standbys, for sure 🙂 My favorite toppings are toasted pecans and crumbled feta cheese, and sometimes we use sliced pears or peaches instead of strawberries!

    And this salad looks so fresh and beautiful. I so wish we could find spinach regularly here, but it is a rare treat. I’m growing some in my backyard food garden but I think it’s already much too hot for it to thrive…it looks a little…shall we say….pitiful? Hee heee…..poor spinach! If it can pull through I will have to use it to make this beautiful salad. 🙂

    I’ve never been a bikini girl myself – to me, one pieces are so much cuter and classy. I agree with the other peeps above that Antropologie has really nice suits that are well made. My favourite one is from there.

    I like all the swimsuit suggestions so far… my favorite is the Juicy suit: got it last spring and am still just as in love with it as ever.     I was never a big “fruit on salad” kind of a person. For me, salads were meant to be savory with lots of veggies. But as I got better at cooking and trying new things I discovered how amazing fruit can be on a salad. One of the bests: spinach salad with chopped apple, walnut and red onion. YUM!

    Hey Jenna! In your funfetti cupcakes with vanilla buttercream recipe, is that just enough buttercream for 12 cupcakes, or would it make enough if I doubled the cupcake recipe?

    I don’t like spinach- but the toppings look good!
    I always get one pieces cause I’m not allowed to wear bikinis-I think I might get a tankini this year. I don’t know. TJMaxx has some cute ones.

    I know a bunch of people have mentioned ModCloth, but I have their red one-piece with white dots and it fits like a freaking DREAM. Honestly, I look horrible in bathing suits and the ones they stock are so flattering, it’s unreal.

    Because I’m cheap though, I found out the designer (Esther Williams) and bought directly from a retro shop in North Carolina (Retrodress) for like, $20 cheaper than ModCloth. I’m classy like that. I have this one: http://www.retrodress.com/ew169.html

    It’s been almost a year since the last comment, but oh well! Ha. I love strawberries in salad. My version is a bit different due to allergies and wanting to beef up (figuratively) my salads. No nuts, swap mozzarella for goat cheese, add mushrooms, tomatoes, cukes, and sometimes sweet corn nibs. Keep the spinach, strawbs, and balsamic dressing. The tomatoes don’t clash with the strawberries. The cukes are refreshing and they and the mushrooms don’t have overwhelming flavors. The corn adds another bite of sweet but with some slight salt.
